Zucchini Hot Dish

1 med. zucchini, peeled, seeded and thinly sliced
1 med onion, chopped
1 1/2 ground beef
1/2 tsp. salt
1/8 tsp pepper
1 (6 ox.) pkg . stuffing mix
1 c. sour cream
1 ( 10 3/4 ox ) can cream of chicken soup
1 c. carrot, grated

Cook zucchini and onion in small amount of boiling water until tender (5 min)
Drain well and set aside. Brown ground beef; drain. Add salt and pepper/ Prepare stuffing according to directions on box. Mix sour cream. soup and grated carrot. Fold in zucchini. Spread zucchini mixture in a greased 3 qt. casserole dish. Top with ground beef, then stuffing.
Bake at 350* for 45-50 min.
